Lemon Bars

This may just be the best lemon bar recipe known to man… The crust is thick, the filling is sweet, and the texture is amazing. The recipe came to me from my roommate, and this goodness must be shared.

Lemon Bar Crust

2 cups flour

½ cup powdered sugar

2 sticks butter

Mix together  with a pastry blender or fork until textured like pie dough.

Pat into 9×13 pan. Bake for 20 min @ 350 or until slightly brown around edges.

 Lemon Bar Filling

2 cups sugar

juice of 2 lemons

4 eggs beaten

pinch salt

Mix together. After crust is baked, pour lemon mixture over hot crust and bake for 20 min more until bubbly and brown around the edges. Sprinkle with powdered sugar while still hot.
